Nasturtium

Nasturtium, pronounced like “na-stersh-um,” is translated as “nose twister” and of that we can be certain. The delicate leaves bear nice variegated colors and resemble a miniature Lily Pad. This potent microgreen has a peppery, wasabi-like flavor with a very pungent finish.

Nasturtium leaves are an excellent source of vitamins A, C, and D, beta-carotene, iron, manganese, and flavonoids.

Pairs well with seafood, sushi, soups, and as added kick to any salad. They work best for raw preparations, but can also be mixed in a vinegar solution with a clove of garlic to create a hot, pungent, vinegar for salad dressing. You can also soak it with vodka for a peppery cocktail mixer.

In fact, arugula may be one of the most popular greens known to man!

Arugula microgreens are best used for raw preparations, and add an extra layer of texture and flavor to any salad. Though small, these peppery leaves are best suited for savory dishes and are best left undressed and added just before consumption. These tiny greens can be added to pasta, soups, salads, omelets, or vegetable plates. They are also great when sprinkled over boiled or mashed potatoes. Pairing well with cheeses such as parmesan, feta, chèvre, blue cheese, gorgonzola, and mozzarella these palate busters are excellent for cheese trays or charcuterie boards.
